"I chose Eastern IL University because I wanted to go into a field where I could earn at least a master's degree. Not wanting to uproot our family (my husband & 3 children), I was geographically limited to IN State University or Eastern IL University. I narrowed my major down to two options-social work or dietetics. This decision came less than 6 months after we adopted our son; my frustration with the foster care system, my lifelong love of healthcare & food, an interest in the microbiome (triggered by a documentary), and wonderful interactions with Dr. Strawser and Dr. Dietz (EIU Dietetics) swayed me to Eastern IL University. On a more whimsical note, my girls, when they were little, were always enamored with EIU because they said that castles are where princesses go to school, and they wanted to go to school at the castle (EIU) when they grew up. While it was not a deciding factor, I found it to be a fun bonus that I would one day graduate from the castle that we used to talk about every time we drove by."
