Hello!

Hi! My name is Yolanda Joseph and I have the pleasure of serving as the Nutrition Education Coordinator at the HERC. I received my bachelor's degree at the University of Central Florida and my passion for health and wellness led me to studying Nutrition and Dietetics. I advocate for keeping and respecting cultural preferences and practices when it comes to balanced nutrition. As the Nutrition Education Coordinator, my goal is to provide opportunities to develop self-efficacy when it comes to your overall nutrition. You are in the driver's seat of your health; I am merely here to assist you in creating mindful patterns and behaviors. My services include one-on-one nutritional assessment sessions through our Nutritional Analysis program, administering events such as Healthy Cooking 101, and collaborating with various departments to provide nutrition education programming campus wide. Cooking Thyme!

Cooking Thyme is a series of cooking classes throughout the year that feature different themes, cooking techniques, and aspects of balanced nutrition.This program is a hands-on experience in the kitchen. No kitchen or nutrition experience is required, it’s FREE and the best part is you get to eat what you make! Registration is required; please click on the date to sign up for the session you wish to attend. Don’t hesitate to sign up for the sessions, as each class fills up quickly!

An annual campaign starting from February 20th to February 24th aiming to educate the public about the realities of eating disorders and to provide hope, support, and visibility to individuals and families affected by eating disorders.

The Mirror Project

Student Recreational Center

Partnering with the student recreational center we will be covering some mirrors in the center, where students, faculty and staff are able to write positive traits, compliments and affirmations about themselves other than their physical appearance. This will be available throughout the entire week! Stop by the rec to write the beauty within.

You Are NOT What You Eat

This is an interactive panel discussion where students, faculty and staff will have the opportunity to have their questions answered by licensed clinical professionals related to nutrition, body image, dieting and mental health. Please join the conversation!

Stop by the MLK union to sign the Body Acceptance pledge and get an opportunity to write some of the things you have heard about your body image, words you’ve used to even describe others and yourself, and words used innocently in regular conversation that can be subconsciously affect us.
