MINUTES OF THE COUNCIL ON ACADEMIC AFFAIRS 5-25-00

The May 25, 2000 meeting of the Council on Academic Affairs was held at 2:00 p.m. in the Arcola/Tuscola Room.

Members present: Dr. Addison, Dr. Bock, Mr. Brinkmeyer, Dr. Cosbey, Dr. T. Mason,

Dr. Methven, Dr. Owen, Ms. Rutter, Dr. Shonk, and Dr. Wohlstein.

IV. Proposed Revision of the School of Family and Consumer Sciences Dietetics Curriculum, 00-23.

Dr. M. Brown and Dr. M. Burns, Family and Consumer Sciences, presented the proposal and answered questions of the Council. The motion passed unanimously.

This action approves the following to become effective Fall 2000.

FCS 1120, Food Selection and Preparation. (2-2-3) F, S. Food Sel & Prep. Food selection considerations and basic food preparation practices.

This action approves the following to become effective Spring 2001.

Course to be deleted: FCS 2472.

FCS 2100, Nutrition in a Global Society. (3-0-3) F, S, Su. Nutr in Society. Study of the impact of individual food behaviors on the nutritional status of individuals, families, and the global society and the identification of behavior change strategies to positively influence health outcomes.

This action approves the following to become effective Fall 2000.

Course to be deleted: FCS 4140.

FCS 2140, Quantity Food Production. (2-2-3) F, S. Quant Food Prod. Practical experience in quantity food production, menu planning, recipe standardization and quality improvement. Prerequisites: FCS 1120, FCS 1121, and FCS 2100.

This action approves the following to become effective Fall 2001.

Course to be deleted: FCS 2492.

FCS 2190, Nutrition in a Global Society, Honors. (3-0-3) F. Nutr in Society. Study of the impact of individual food behaviors on the nutritional status of individuals, families, and the global society and the identification of behavior change strategies to positively influence health outcomes. Prerequisite: Admission to the University Honors Program.

This action approves the following to become effective Spring 2001.

FCS 3120, Food Science. (2-4-4) S. Food Science. Scientific principles underlying food preparation and processing, principles of experimental methodology as applied to food science. Prerequisite: CHM 2430/2435, FCS 1120, FCS 1121, and MAT 2250G.

This action approves the following to become effective Fall 2000.

Add FCS 3151 as a prerequisite to FCS 4751.

FCS 3151, Community Nutrition. (3-0-3) F. Community Nutr. Factors influencing human nutrition needs and eating patterns and related counseling and educational techniques for use in the community setting. Prerequisite: FCS 2100.

This action approves the following to become effective Spring 2001.

FCS 3755, Physiological Nutrition. (3-0-3) S. Physio Nutr. Concepts of normal human nutrition with emphasis on classification and metabolism of nutrients. Prerequisites: FCS 2100, CHM 1410G, 1415G, and BIO 2001G.

This action approves the following to become effective Fall 2001.

FCS 4150, The Profession of Dietetics. (1-0-1) F. Prof Dietetics. An overview of the field of dietetics, including in-depth look at the numerous opportunities in dietetics and the application process for the post-baccalaureate dietetic internship. Prerequisite: Completion of 75 hours.

This action approves the following to become effective Spring 2001.

FCS 4750, Advanced Human Nutrition. (3-0-3) S. Adv Nutrition. Emphasis on biochemical functions of nutrients in the study of human nutrition. Prerequisite: CHM 1310, 1315, 1410G, 1415G, 2430, 2435, and 3450; FCS 2100 and 3755; and BIO 2001G; or permission

of the instructor.

This action approves the following to become effective Fall 2000.

FCS 4751, Nutrition Therapy. (4-0-4) F. Nutr Therapy. Application of the science of nutrition to the maintenance of optimum health and the role of nutrition in the prevention and treatment of disease. Prerequisites: CHM 2430/2435, FCS 2100, FCS 3151, and FCS 3755.

This action approves the following to become effective Fall 2000.

FCS 4940, Food Systems Management. (3-0-3) F, S. Food Systems. Organization and administration of food service systems, human resource management, cost control, food purchasing, facility and equipment planning. Prerequisite: BUS 2101, BUS 3010, FCS 1120, FCS 1121, and FCS 2140.

Pending Executive Action Items:

INT 2064 - Materials Processing (2-4-4) change in the title and credit hours to INT 2064 - Manufacturing Processes (2-2-3).

BIO 3300 - Change prerequisite from "BIO 1100, 1200G and 1300G or equivalent" to BIO 1100".

HIS/ESC 3990G. Medieval Archaeology, Honors (3-1-4) (Arr-Arr-1 to 4). An introduction to archaeology as a crossroads, discipline, integrating a humanistic inquiry into history with the scientific methodologies which help evaluate the vestiges of past material culture. It will be taught only within the Semester Abroad program and emphasize the cultural heritage in the countries concerns. May be repeated. Prerequisite: Admission to the Honors Program Students enrolled for credit must be admitted to the Honors Program and must enroll for 4 semester hours. Student auditors must have permission of the Director of the Honors Program and may enroll for 1 to 4 semester hours.

The following items were approved by Executive Action to become effective immediately:

Change in catalog description for Business Internship courses: ACC 4275, FIN 4275,

AIS 4275, COM 4275, CIS 4275, MGT 4275, and MAR 4275. Present description reads

(Ar.-Arr.-3 or 6 or 9 or 12). This should be changed to (Arr.-Arr. 1-12) which will meet

the university guidelines of one hour of credit for one week of employment.
