Colleen O'Sullivan - Site - Udi's
"After my internship at Udi's, I have realized I am going to be doing exactly what I have always wanted as a career!"
During my internship, I completed several projects that were all very beneficial to me and the company. Each week was unique since I was assigned various projects at different starting points. Although my internship was with a food company, my tasks never consisted of selling their products; all of my tasks were primarily based on educating people about food allergy awareness. I worked with several colleges to determine what changes they can make in order to accommodate gluten free students on campus. I also completed research in order to help the company improve their ambassador program. My biggest project was a huge help to not only the company but also to many college campuses and students. I even decided to continue my internship after my hours were completed and have been working with EIU in order to spread food allergy awareness and help increase options to students who eat in the dining halls.
My internship really helped me to realize that I picked the right career path. I am very excited about what will come after graduation and cannot wait to help people deal with food allergies. I have a strong passion for being able to help people and I feel that since I can relate to food allergies, I will be able to be more successful. There are several establishments that are more interested in either creating, buying, selling or serving gluten free products since it is becoming more known. I would love to be able to take part in the movement and continue to make a difference.

"My internship at Anthropologie was one of the most rewarding and exciting experiences I've ever had!"
During my internship, I learned so many new things while preparing displays. Every project was hands on and developed by the display coordinator and myself. We started out with a general theme for what we were supposed to be creating, then researched different inspiration for the projects, and eventually came up with something we could construct fairly simply and quickly due to time deadlines. I learned a lot of new crafty techniques and even got to play with power tools.
After I graduate, I plan on working for the Urban Outfitters Company. I’d like to start out at Urban Outfitters as a sales associate or manager, and work my way up to becoming either the merchandiser or display artist. I had so much fun working at Anthropologie, and I would love to stay with their company for a while.
