Dr. Burns regularly teaches the following undergraduate courses: Quantity Food Production (FCS 2140), Food Science (FCS 3120), Personal Nutrition (FCS 2100), and Nutrition in the Life Span (FCS 3755). At the graduate level, Dr. Burns frequently teaches Evaluation in Family and Consumer Sciences online (FCS 5470), Nutrition in the Life Cycle (FCS 5153), Nutrition and the Addicted Person (FCS 4753), and Nutrition for the Older Person (FCS 5151).
Dr. Burns earned a BS and MS from Eastern Illinois University in Home Economics: Dietetics Option. She earned her PhD in Human Resource Education from the University of Illinois Urbana Champaign in 1999.
