"My experience as a graduate teaching assistant in the Foods Lab at EIU was one of the best decisions I made during my graduate school career. It allowed me to have a job that was flexible enough to accommodate my class schedule, and allowed me to be involved in the FCS department in more ways than just teaching. I was given the opportunity to share my passion for cooking with students, and show them that fixing fresh, healthy meals does not have to be difficult or extremely time consuming. I was also able to serve as a substitute teacher in other FCS courses, and assist professors with research projects. Working as a graduate assistant helped me improve my teaching and public speaking skills immensely, and played a large role in helping me reach my goal of becoming a Registered Dietitian."
